Apple pie with cottage cheese

Doughi: 300g flour
10g yeast
1tbsp sugar
1cup lukewarm milk
1 egg
Toppingi: 500g cottage cheese
80g sugar
1tbsp lemon juice
½ lemon’s grated peel
2 eggs
2pack vanilla pudding mixture
1200g sour apples
200g cherry jam
100g apricot jam
1tbsp powdered sugar
20g chopped almonds


Yeast dough

For yeast dough to be successful it's really important to have fresh yeast. Use dry yeast before expiry date. Pressed yeast must be light-colored, without sour smelling. General proportion is 20g yeast per 500g flour. If the dough is made with almonds, raisins, other add-ins, than it's needed to add more yeast. For dough to rise, all ingredients must be of room-temperature, so take them out of refrigerator an hour before starting making a dough.

Here is simple way to prepare dough for shortcake pastry.
Very important rule - all ingredients must be chilled until very cool. You may even wash your hands in cold water before start kneading dough.


Small tarts with cream filling

Ingredients:
200 g flour
80 g sugar
10 g vanilla sugar
1 egg
100 g unsalted butter or margarine
Grated peel from 1 lemon
Pinch of salt

Make shortbread dough as described here and let it chill.
Preheat oven to 200 C. Grease ramekins.


Boeuf Bourguignonne

Serves 6

A recipe which has been in our family for years and was always one of my mother’s favourites. It is a lovely comforting dish for cold winter evenings and can be left simmering slowly in the oven whilst you are out, ready for your return.

Ingredients:

1.25 kg round or chuck steak
Flouri
Olivei oil
Butteri
Black pepperi
4 tablespoons cognac
2 carrots
1 leek
4 shallots
Lemoni juice
1 medium onion
1 clove garlic
1 bouquet garni
Half a bottle of Red Burgundyi
Beef stocki or water to cover
18 baby onions
Sugar
12 button mushrooms
Finely chopped parsley
