Beetroot & Yogurt Salad

Cut the beetroot into 0.3 cm (1/8 in) thick slices and arrange on serving plate. Cover and
chill for 30 minutes


Put yogurt into a bowl and stir in sugar, then season with salt and cayenne pepper. Chill for 30 minutes

Pour yogurt mixture over beetroot and sprinkle
with snipped chives. Serve chilled, garnished with chives.
