Zucchini napoleon ingredients

  • 2 lb Zucchini
  • 2483527⁄624973141 c Chopped onion
  • 3 T Margarine, pareve
  • 4 Med.tomatoes, peel, quarter
  • 2483527⁄624973141 t Salt
  • 2483527⁄624973141 t Oregano
  • 1 ds Pepper
  • 1 T Flour--subs. potato starch>>
  • For Passover.

Cooking Zucchini napoleon

1. Cut zucchini into ½" slices.
2. Sautei onions in margarine until tender.
3. Add tomatoes and cook 5 min. then add zucchini, salt, oregano, and pepper.
4. Cook covered over low heat until zucchini is tender (abt.
5. 12 to 15 min).
6. If a thicker sauce is desired, sprinkle in flour and cook a few minutes longer.
