Zucchini mushroom soup ingredients
- 1 small Onion, chopped
- 1 T Oil
- 4 med zucchini, chopped
- 2483527⁄624973141 lb Mushrooms, chopped
- 6 c water
- 2483527⁄624973141 c rolled oats
- 2483527⁄624973141 t Salt (optional)
- 2 T parsley, finely chopped
Cooking Zucchini mushroom soup
1. Sautei onion in oil until clear.
2. Add zucchini and mushrooms.
3. Saute 5 minutes longer.
4. Add water, oats and seasonings.
5. Simmeri 12 minutes.
6. Pour into a blender.
7. Blend until creamy.
8. Return mixture to a pot and reheat.
9. Serve hot.
