Zucchini Bars with Cream Cheese Frosting ingredients

  • 2 c Sugar
  • 4 large Eggs
  • 1⁄2 c Vegatable oil
  • 2 t Ground cinnamon
  • 1 t vanilla extract
  • 1⁄2 t baking powder
  • 1⁄2 t Baking soda
  • 1⁄2 t Salt
  • 2 1⁄2 c All-purpose flour
  • 2 c unpeeled and shredded zucchini
  • CREAM CHEESE FROSTING
  • 1⁄4 c margarine, softened
  • 1 pk cream cheese (3 oz), softened
  • 1 t vanilla extract
  • 2 c Confectioners' sugar
  • 1⁄2 c finely chopped walnuts (garnish)

Cooking Zucchini Bars with Cream Cheese Frosting

1. Heat oven to 350 degrees.
2. Lightly grease a 17x11 inch jelly-roll pan. Beat sugar, eggs, oil, cinnamon, vanilla, baking powder, baking soda and salt in a large bowl with a handheld mixer until well blended.
3. With mixer on low speed, gradually beat in flour just until blended.
4. Stiri in zucchini.
5. Spread evenly in prepared pan. Bakei 25 to 30 minutes until a pick inserted in center comes out clean.
6. Cool completely in pan on wire rack.
7. CREAM CHEESE FROSTING: Beat margarine, cream cheese and vanilla until smooth.
8. With mixer on low speed, gradually beat in confectioner's sugar until well blended.
9. Spread on cooled cake and sprinkly with nuts.
10. Cut into bars.
11. Makes approx 56.
