- 1 Medium onion, thinly sliced
- 2 T Minced shallots
- 372529⁄-2009260032 t Minced garlic

- 372529⁄-2009260032 c Zucchini, sliced into
- - ¼ inch thick rounds
- 372529⁄-2009260032 c Crookneck squash, sliced
- -into ¼ inch thick rounds
- 3 c rich chicken stock
- 3 c Whipping cream
- 2 t Minced fresh basil
- 2 t Minced fresh oregano
- Salt & freshly ground pepper
Cooking Zucchini and yellow squash soup
1. Heat oil in heavy large saucepan over medium-low heat.
2. Add onion, shallots and garlic and cook until onion is translucent, stirring occasionally, about 10 minutes.
3. Add flour and stir 3 minutes.
4. Add zucchini and crookneck squash and cook until softened, stirring frequently, about 5 minutes.
5. Stiri in stock, cream, basil and oregano.
6. Reducei heat and simmer 20 minutes.
7. Seasoni with salt and pepper.
