Zesty Lamb Taco Casserole ingredients
- 1 lb Boneless leg of lamb
- 1 T Oil
- 1 garlic cloves
- 8 oz canned reduced sodium beef b
- 8 oz canned tomato sauce, low sod
- 1 pk Dry Taco Seasoning mix
- 12 oz Canned corn
- 1 c Green or red bell pepper
- 1 1⁄2 c Rice
Cooking Zesty Lamb Taco Casserole
1. Heat oil and garlic to medium hot and add lamb strips.
2. Cook until no longer pink.
3. Add broth, sauce and seasoning mix. Bring to a boil, reduce heat; cover and simmer 5 minutes.
4. Add corn and peppers.
5. Bring to a full boil and stir in rice.
6. Cover again and let stand five minutes or until moisture is absorbed.
7. Fluff with fork.
8. May be served with grated cheese, black olives, and tortilla chips.
