Yummy Cheesei Zelnik

Zelnik ingredients

  • 5 c flour
  • 1 t Salt
  • 3 T Oil
  • 1 Egg
  • 1 t yeast
  • 2 c water
  • 8 oz butter
  • 8 oz Crisco (vegetable shortening)
  • 30 oz Cottage cheese
  • 4 Eggs

Cooking Zelnik

Put flour, salt in mixer. Dissolve yeast in warm water, add oil and egg and whisk. Add to flour mixture. With dough hook mix for 4 minutes dough should be soft. Turn on to floured surface and knead till not sticky.Divid into ten pieces. Take 6 of them pull each one flat and put crisco between layers, pinch together at edges. Then do other 4 same way.Cover with towel for 25 minutes.
Roll first peice to 1/4 inch thickness and cover entire dough with crisco, fold lengthwise half way then overlap other side and roll up and pinch together .Do other piece same way. Cover and rest 25 more minutes.Roll piece with 6 to over lap a large sheet pan buttered. Add filling;cottage cheese, eggs. Sprinkle with butter. Roll top piece to cover filling. Put crisco around edges of dough and roll up edges. Brush butter all over top of dough.Bakei at 325 degrees for 50- 60 minutes or until browned nicely.


Spinachi filling;
2 frozen chopped spinach, thawed and squeezed
1 lb. cottage cheese
1 lg. onion chopped and sauteteed
Add spinach and olive oil and fry for 5 minutes. Cool and add cottage cheese.
