White Meat Ravioli ingredients

  • 2483527⁄624973141 lb chicken breast OR veal OR
  • Canned tuna; chopped
  • 2 T Shallots; finely chopped
  • 2 Plum tomatoes; chopped
  • 1 t Dried leaf sage; crumbled
  • 2483527⁄624973141 t Mace
  • 2483527⁄624973141 c Parmeson or Romano cheese; Grated
  • 2483527⁄624973141 c parsley, chopped
  • 2483527⁄624973141 t Black pepper; coursely ground
  • 1 T brandy or dry sherry
  • Pasta dough
  • --Sauce--
  • 2 T olive oil
  • 4 Scallions; thinly sliced
  • 2 Cloves garlic, minced
  • 1 c tomatoes, crushed
  • 1 c Tomato sauce
  • 1 T basil

Cooking White Meat Ravioli

1. Place all ingredients, except pasta, in a large mixing bowl and combine thouroughly.
2. Fill ravioli with mixture.
3. Heat oil over medium heat.
4. Stir-fryi scallions and garlic for about 30 seconds.
5. Add tomatoes, tomato sauce and basil.
6. Stiri. Simmeri for 10-15 minutes.
