Welsh rabit ingredients
- 500 g Bread, white
- 100 g Cheese, cheddar
- 15 g Mustard, English (Coleman's)
- 25 g Butter, table
- 1 1⁄4 dl Milk, pasteurised
- 1 Egg yolks
- 1⁄3 dl Beer
- 1⁄50 g Salt
- 5 g Cayenne pepper, ground
- 1⁄50 dl worchestershire sause
Cooking Welsh rabit
1. MELT BUTTER IN A PAN ADD FLOUR AND MIX - COOK BUT DO NOT COLOUR GRADUALLY ADD THE COLD MILK AND MIX TO A SMOOTH SAUCE SIMMER AND THEN ADD THE GRATED CHEESE AND MELT ADD EGG YOLK AND STIR IN A SEPERATE PAN BOIL THE BEER AND REDUCE TO 1/2 TABLESPOON AND MIX WITH OTHER SAUCE ALLOW TO COOL AND SPREAD ON BREAD PLACE IT ON A BAKING TRAY AND GRATINATE.
