Cooking Watermelon preserves
1. Parei and cut watermelon rind into pieces 2 inches long and ¾ inches wide.
2. Cover with brine made by dissolving 1 tablespoon salt in 1 quart water.
3. Let stand overnight.
4. Drain.
5. Cover with water and boil 10 minutes.
6. Drain.
7. Cover with a heavy sirup made of 1 part sugar and 1 part water.
8. Add 1 thinly sliced lemon to each 3 quarts rind.
9. Add whole spices if desired.
10. Cook slowly until rind is tender and clear.
