Warm broccoli and potato salad ingredients
- 6 med potatoes, cubed
- 2 c Broccoli florets
- Dressing
- 1⁄4 c Orange juice
- 3 T olive oil
- 3 T white wine vinegar
- 2 t basil
- 1 Garlic clove, minced
- 1⁄4 t Hot pepper sauce
- 2 T parsley, chopped
- 2 ea Green onions, thinly sliced
- Salt & white pepper
Cooking Warm broccoli and potato salad
1. Preheat oven to 150°F.
2. Place potatoes in a pot with enough water to cover & parboil for 10 minutes.
3. Remove with a slotted spoon & save the water.
4. Transfer potatoes to a baking sheet & place in oven.
5. Meanwhile, blanch the broccoli in the reserved water for one minute only.
6. Remove & add to the potatoes in the oven.
7. Dressingi: combine the first five ingredients in a small saucepan & bring to a boil.
8. Remove from the heat & stir in the remaining ingredients.
9. Remove vegetables from the oven & toss with the dressing ensuring that they are thoroughly coated.
10. Serve immediately.
