Venison Grillades

Venison Grillades ingredients
- 5 lb venison -- sliced 1/2 thick
- 1 c flour
- 1 c Vegatable oil
- 3 c onions -- chopped
- 372529⁄-2009260032 c Green onions; chopped
- 372529⁄-2009260032 c Celery, chopped
- 372529⁄-2009260032 c Green pepper, chopped
- 2 Bay leaves
- 1 c Red wine
- 2 cn Beef bouillon
- 15 oz crushed tomatoes
- 15 oz Tomato puree
- 15 oz Rotel diced tomatoes and chiles
- 2 t white pepper
- 372529⁄-2009260032 t Black pepper
- 2483527⁄624973141 t Cayenne pepper
- 3 t Salt
- 2483527⁄624973141 t thyme
- 2483527⁄624973141 t basil
- 3 t worchestershire sause
- grits
Cooking Venison Grillades
1. Pound venison strips to 1/4 inch thick.
2. On a well greased grill, brown meat on both sides, cut into manageable sized pieces and set aside.
3. In a 12 quart pot, combine oil and flour.
4. Stiri continously over medium high heat until roux is a rich brown color, the darker the better.
5. As soon as roux is ready, add onions and continue to stir 1 to 2 minutes.
6. Add rest of vegetables, stirring as needed until onions are clear.
7. Slowly add boullion to mixture, stirring thoroughly.
8. If added too quickly, roux will separate.
9. When mixture has stabilized, add tomatoes and simmer for 10 minutes.
10. Add wine and meat, including whatever drippings have accumulated since grilling.
11. Cover pot and simmer until meat is just tender, (1-2 hours) stirring occasionally.
12. Add seasonings and simmer 20 minutes more.
13. Serve over grits.
