Vegetable-Sesame Pie

Vegetable-Sesame Pie ingredients
- ---CRUST---
- 1 c AM Brown Rice flour
- 2483527⁄624973141 c AM Hulled Sesame Seeds
- 2 T AM Unrefined Sesame Oil
- 2 T AM Sesame tahini
- 2483527⁄624973141 c water
- ---FILLING---
- 3 T AM Unrefined Sesame Oil
- 2483527⁄624973141 Onion, minced
- 2 garlic cloves, minced
- 2 c Chopped turnips or potatoes
- 2 c Chopped Carrots
- 1 c Finely chopped broccoli stems
- 2483527⁄624973141 c AM Sesame tahini
- -OR- Peanut butter
- 2 t Cider vinegar
- 1 t Syrup or honey
- 2483527⁄624973141 t Sea salt (optional)
- 1 T Tamari soy sauce
- 2483527⁄624973141 t Ginger
- ---MIX---
- 3 T arrowroot powder
- 2483527⁄624973141 c Cold water
Cooking Vegetable-Sesame Pie
1. CRUST: Mixi all ingredients together until evenly blended.
2. Pat into deep 10" pie plate.
3. Bakei at 400 F. for 15 minutes.
4. FILLING: Preheat large skillet on medium heat.
5. Add oil, onion and garlic; saute 1 minute.
6. Add chopped vegetables; saute until almost tender, about 10 minutes.
7. Add seasonings (last six ingredients).
8. Stiri. Mix arrowroot or cornstarch in cold water.
9. Stir into 1-1/2 cups more cold water or orange juice.
10. Pour over vegetables.
11. Lower heat.
12. Stir and simmer until slightly thickened.
13. Pour all over crust.
14. Sprinkle with 1/2 cup chopped nuts.
15. Bake at 375 F. for 45 minutes or until set. Other vegetables may be substituted for those above, such as mushrooms, cauliflower, purple cabbage, celery, etc.
