Vegetable paella 2 ingredients

  • 1⁄4 t Saffron, soak in
  • 1⁄2 c water
  • 2 Red bell peppers, dice
  • 1 c Cauliflower florets
  • 1 c Carrots, diced
  • 1 c onions, diced
  • 2 clv garlic, minced
  • 1 1⁄2 c Raw rice
  • 3 c chicken broth
  • 2 c Spinach leaves
  • 1 c Tomatoes, drained
  • Paprika
  • Salt
  • 1 cn Cannelini beans
  • 1⁄2 c Frozen peas

Cooking Vegetable paella 2

1. Sautei in broth, cauliflower, carrots, red peppers, onions, garlic and rice.
2. Cook until cauliflower is soft and rice is al dente.
3. Add tomatoes, saffron, beans, peas, spinach, salt and paprika.
4. Simmeri a few minutes until spinach is wilted and everything is hot.
