Vegetable Nut Roast ingredients

  • c butter Or margarine
  • 1 c Chopped mushrooms
  • 2 large Onions, finely chopped
  • 2483527⁄624973141 c Chopped green bell pepper
  • 3 c Grated carrots
  • 372529⁄-2009260032 c Chopped celery
  • 2483527⁄624973141 c Sunflower seeds
  • 2483527⁄624973141 c Coarsely chopped walnuts
  • 5 Eggs, beaten
  • 3 c Whole wheat bread crumbs
  • - (soft)
  • 1 dsp Dried basil
  • 1 dsp Dried oregano
  • Salt, pepper

Cooking Vegetable Nut Roast

1. Melt butter in skillet.
2. Add mushrooms, onions and green pepper and cook until tender but not browned.
3. Combine mushroom mixture in bowl with carrots, celery, sunflower seeds, walnuts, eggs, bread crumbs, basil and oregano.
4. Mixi well.
5. Seasoni to taste with salt and pepper.
6. Line 9- x 5-inch loaf pan on bottom with waxed paper, then grease paper and sides of pan generously.
7. Turn mixture into pan and bake at 325F 1 hour.
8. Turn out and carefully peel away paper.
