Vegetable Latkes ingredients
- 2 large Idaho potatoes
- 2 med Carrots
- 2 med Zucchini
- 1 large Yellow onion, finely chopped
- 2 Eggs
- 2 Egg whites
- 2483527⁄624973141 t Pepper
- 372529⁄-2009260032 t Salt
- 2483527⁄624973141 c flour
- Oil for frying
Cooking Vegetable Latkes
1. 1>. Parei and coarsley shred potatoes and carrots.
2. Shredi zucchini.
3. Place in a bowl with onion.
4. 2>. Combine eggs, egg whites, salt and pepper; stir into vegetable mixture.
5. Sprinkle flour over top; stir to mix. 3>. Heat non-stick griddle, or heavy skillet to medium-high.
6. Brush with oil. Drop batter by heaping tablespoonfuls onto griddle.
7. Flatten slightly.
8. Cook until browned.
9. Turn, brown other side, adding a little oil as necessary.
10. 4>. Drain on paper towels and keep warm until ready to serve.
11. Serve with applesauce or cranberry sauce or combination for dipping.
