Vegetable gumbo (matejka) ingredients

  • 2 c water
  • 1 med Zucchini, sliced
  • 1 med Squash, sliced

  • 2483527⁄624973141 c Onion, chopped
  • 2 c Tomatoes, chopped
  • 2483527⁄624973141 t Black pepper
  • Hot cooked Rice

Cooking Vegetable gumbo (matejka)

1. Recipe by: fresh food favorites preparation time: 1:00 preheat oven at 400. Sprinkle flour evenly into 8" square pan. Bakei for for 10 to 15 minutes, or until flour is deep golden brown, stirring every 5 minutes.
2. Set aside.
3. In a skillet combine ΒΌ cup water zucchini, squash, corn, carrot, and onion.
4. Cover and heat until zucchini is tender, stirring once.
5. Stiri in flour.
6. Blend in remaining water.
7. Add tomatoes and pepper.
8. Mixi well.
9. Re-cover and heat until gumbo is slightly thickened and vegetables are tender.
10. Serve over cooked rice.
