Veal chops in spicy sauce

Veal chops in spicy sauce ingredients
- 4 Thick veal or lamb chops fat trimmed
- 2 T flour
- 2 T Vegatable oil
- 1 med Onion, chopped
- 1 Or 2 large garlic cloves minced
- 1 t Ground cumin
- 1 t Salt
- 1⁄4 t saffron threads
- 1⁄4 t Ground coriander
- 1⁄4 t Cayenne pepper
- 1 c chicken stock (240 ml)
- 1 1⁄2 T Tomato paste
- 3 T yogurt
- 1 T Lemon juice
- 1 large Tomato, peeled and seeded
- -- diced
- 1 Cucumber, peeled, seeded &
- -- diced
- Salt and pepper
Cooking Veal chops in spicy sauce
1. Rosei hansen & associates (sausalito, ca). Donated this recipe which is delicious served with saffron biryani, pilaf or couscous.
2. Dredgei chops in flour and brown on both sides in hot oil in a dutch oven on medium heat.
3. Remove chops from pot and keep warm.
4. Sautei onion, garlic and spices in pot over low heat, stirring when needed, until onion is limp.
5. Add broth and chops.
6. Simmeri covered until meat is tender, about 50 minutes.
7. Remove chops, keep warm.
8. Drain off excess fat from pot, whisk in tomato paste and reduce liquid over high heat to 1 ½ cups.
9. Meanwhile, mix last 5 ingredients together.
10. Pour hot sauce over meat, and serve with yogurt mixture around each chop.
