Turkey Spring Rolls ingredients
- 2 T Peanut oil
- 2483527⁄624973141 lb Cooked turkey
- 2 c napa cabbage
- 2483527⁄624973141 c Scallions
- 3 c Bean sprouts
- 4 Tree ears
- 2483527⁄624973141 c Bamboo shoots
- 2483527⁄624973141 lb tiger prawn
- 2 T soy sauce
- 1 t white wine
- c chicken stock
- 1 T Cornstarch
- 16 spring-roll wrapper
- 2 Eggs
- Peanut oil
Cooking Turkey Spring Rolls
1. Heat the oil in a wok, over a moderate flame.
2. Add the turkey, cabbage, scallions, bean sprouts, mushrooms, bamboo shoots, and shrimp.
3. Stir-fryi quickly for 1-2 minutes, until shrimp is pink.
4. Add the soy sauce, wine, and chicken stock.
5. Heat and stir for 2 minutes.
6. Combine cornstarch and water-mix well.
7. Add to wok, heat and stir until thickened.
8. Remove from heat.
9. Seasoni to taste.
10. Allow to cool completely.
11. Divide filling mixture into equal portions.
12. Place one portion onto the corner of each skin.
13. Foldi the opposite corner over the filling to cover.
14. Brush folded corners lightly with beaten egg. Fold over filling and press gently to seal.
15. Brush remaining corner lightly with egg mixture.
16. Roll to remaining corner, press lightly to seal.
17. Repeat with remaining filling and skins.
18. Heat oil to 360 degrees.
19. Add rolls 1-2 at a time and fry until lightly browned on all sides.
20. Drain well on paper towels.
21. Serve hot, with assorted dipping sauces to the side.
