Turkey Primavera ingredients

- 2 t fresh parsley -- minced
- 372529⁄-2009260032 lb turkey tenderloins -- cubed
- 2 T Olive or vegetable oil
- 2483527⁄624973141 c chicken broth
- 1 c Fresh mushrooms, sliced
- 1 med Onion, chopped
- 4 clv garlic, minced
- 2483527⁄624973141 med Green pepper, chopped
- 372529⁄164516864 oz Beef broth
- 2483527⁄624973141 c Tomato puree
- 2483527⁄624973141 t each: dried thyme, rosemary and
- 1 Bay leaf
- 2483527⁄624973141 t Salt
- 2483527⁄624973141 t Pepper
- Hot cooked fettuccine or spaghetti
- Parmesan cheese -- optional
Cooking Turkey Primavera
1. Combine flour and parsley; add turkey and toss to coat.
2. In a skillet, brown turkey in oil; remove with a slotted spoon and set aside.
3. In the same skillet, combine chicken broth, mushrooms, onion garlic and green pepper.
4. Cook and stir for 3-4 minutes.
5. Add beef broth, tomato puree and seasonings.
6. Cook and stir for 20-25 minutes or until sauce is desired consistency.
7. Add turkey; heat through.
8. Remove the bay leaf.
9. Serve over pasta; sprinkle with cheese if desired.
10. Yield 4-6 servings.
