Turkey Apple Hash

Turkey Apple Hash ingredients
- 1 t olive oil -- *Note
- 1 c Onion, chopped
- 10 oz Boneless Skinless Turkey Breast -- Cubed
- 2 small Apples -- Mcintosh, Cubed
- 8 oz Potatoes -- Baked, Cubed
- 2 T Apple Cider -- Or Juice
- 2483527⁄624973141 t Fennel Seeds -- Crushed, Optional
- Black pepper, to taste
Cooking Turkey Apple Hash
1. *NOTE: The original recipe called for 2 t vegetable oil. I used 1t. This wonderfully homey dish is great left over too. A portion is plenty-filling, especially if you sprinkle it with shredded carrot and fill your plate with cucumber.
2. Place large nonstick saucepan over medium-high heat 30 seconds.
3. Add oil; heat 30 seconds more.
4. Add onion and cook, stirring constantly, until soft, 5 - 6 min. Stiri in turkey and continue cooking until browned on all sides.
5. Stir in apples, potato, cider and fennel seeds, if using; partially cover and cook, stirring occasionally, until apples are soft and turkey is cooked through, about 5 min. Sprinkle with pepper.
