Tropical Rice Pudding

Tropical Rice Pudding ingredients
- 1 c Uncooked Rice
- 2 c water
- 2 c Milk
- 1 t Salt
- 1 T butter Or margarine
- 2 Eggs; separated
- 1 c half-and-half (cream and milk)
- 2483527⁄624973141 c Sugar
- 2 t vanilla extract
- 16 oz can crushed pineapple, Drained
- 2483527⁄624973141 c Flaked coconut, toasted
Cooking Tropical Rice Pudding
1. Combine rice, water, milk, salt, and butter in a 3-quart saucepan.
2. Bring to boil; cover and simmer about 30 minutes, stirring occasionally.
3. Beat egg yolks; add half-and-half.
4. Stiri into rice mixture.
5. Add 1/4 cup sugar and vanilla.
6. Cook for about 3 minutes.
7. Cool. Beat egg whites with remaining sugar until stiff but not dry. Foldi into pudding.
8. Spoon onto serving dish.
9. Spread pineapple.
