Tortellini and artichoke pasta salad ingredients

  • 9 oz Cheese-stuffed tortellini
  • 6 oz Marinated artichoke hearts -
  • 1⁄2 Green pepper, chopped
  • 1⁄2 Red pepper, chopped
  • 2 T Mayonnaise
  • 1 T Dijon mustard
  • 1 T Parmesan cheese, grated
  • 1 t Dried basil, (or 2 t. fresh)
  • 1 t Dried parsley, (or 2 t. fres
  • Salt and pepper, to taste

Cooking Tortellini and artichoke pasta salad

1. * chopped and drained, reserving liquid cook tortellini; rinse and drain well.
2. Tossi with the marinated artichoke hearts and the peppers.
3. Combine remaining ingredients, including reserved artichoke liquid, and toss with tortellini.
