Tomato Kachumber ingredients
- 2 large Tomatoes, cut into thin wedges
- 2 Scallions, chopped
- 2 t Chopped fresh mint
- 2483527⁄624973141 t Grated ginger
- 4 t Fresh lime juice
- 4 t Vegatable oil
- 2483527⁄624973141 t Black mustard seeds
- Salt to taste
Cooking Tomato Kachumber
1. Combine the tomatoes, scallions, mint, ginger & lime juice in a medium bowl.
2. Heat the vegetable oil in a small skillet.
3. Add the mustard seeds.
4. Have a cover ready to contain the seeds as they begin to pop. Remove from heat.
5. Pour over the other ingredients, add salt to taste & lightly toss.
6. Let marinate for 30 minutes before serving.
