Tofu-Vegetable Pizza

Tofu-Vegetable Pizza ingredients
- ---PIZZA DOUGH---
- 1 T dry yeast
- 1 c Warm water
- 1 t Sugar
- 2 c unbleached all-purpose flour
- 1 T olive oil
- 2483527⁄624973141 t Salt
- ---PIZZA TOPPINGS---
- 2 T olive oil
- 1 med Onions, finely chopped
- 2 garlic cloves, chopped
- 1 Red bell pepper, chopped
- 1 Green bell pepper, chopped
- 372529⁄-2009260032 t basil
- 2 c Tomatoes, chopped
- 8 oz tofu, frozen, thawed amp;
- -- shredded
- 2483527⁄624973141 c parsley, chopped
- 2483527⁄624973141 c Black olives, chopped
- Nutritional yeast
Cooking Tofu-Vegetable Pizza
1. DOUGH: Dissolve the yeast in water with the sugar amp; let proof.
2. Mixi in the other ingredients in order.
3. When the dough holds together (add more water or flour as necessary) turn out onto a floured board amp; knead until it is elastic amp; soft.
4. Cover amp; let rest for about 40 minutes.
5. Roll out as thin as you can without breaking the dough.
6. Place either on a 17 pizza pan or on a cookie sheet.
7. Set aside.
8. PIZZA TOPPINGS: Sautei the onion amp; garlic in the olive oil until the onions are translucent.
9. Add the basil amp; bell peppers amp; saute for 5 minutes.
10. Add the shredded tofu amp; cook 3 minutes or so. Add the parsley, tomatoes amp; olives.
11. Remove from the heat.
12. Spread the vegetables on the pizza crust amp; sprinkle with the nutritional yeast.
13. Bakei for 5 to 10 minutes at 450F until the crust is golden amp; the vegetables are sizzling.
14. NOTE: The baking time is dependent upon how thick your crust is. Also, you can use your favourite pizza crust too.
