Tofu salad dressing ingredients

  • 1 ea Garlic clove, minced
  • 1⁄4 c -water
  • 2 T white wine vinegar
  • 1 T olive oil
  • 1 t Dijon mustard
  • 1⁄4 t -Salt
  • 1 pn thyme
  • 1 pn -pepper
  • 5 oz Soft tofu, 150 g
  • 2 T Parsley, fresh chopped

Cooking Tofu salad dressing

1. "great on caesar (see variation at the end of recipe) or any other salad.
2. it"s a good idea although not necessary, to blanch the tofu before using it in this recipe.
3. Just drop it into boiling water, simmer 2 to 3 minutes, then drain it on paper towels.
4. " in food processor or blender, blend garlic, water, vinegar, oil, mustard, salt, thyme and pepper with motor running, gradually add tofu; process until smooth.
5. Mixi in parsley.
6. Taste; adjust seasoning.
7. variation: for tofu caesar dressing (non vegetarian) , reduce salt to a pinch.
8. Blend in 4 anchovies with mustard mixture.
9. Add ΒΌ cup grated parmesan with tofu.
