Timen Ajami (Spiced Lamb Skillet) ingredients
- 2 T Vegatable oil
- 1 large Onion, chopped
- 1 1⁄2 lb Ground lean beef or lamb
- 1⁄4 t Allspice, ground
- 1⁄4 t Madras curry powder
- Salt and pepper to taste
- 2 T Rose water
- 1⁄2 c Currants, dried
- 1⁄2 c Almonds; chopped
Cooking Timen Ajami (Spiced Lamb Skillet)
1. Heat oil in a large skillet.
2. Add onion.
3. Sautei until onion is tender.
4. Add meat.
5. Cook until browned and crumbly.
6. Drain off fat, if necessary.
7. Add allspice, curry powder, salt and pepper to cooked meat.
8. Cook 3 minutes to blend flavours.
9. Add remaining ingredients.
10. Reducei heat and cover.
11. Simmeri over low heat 15 minutes, stirring to prevent sticking.
12. Serve hot.
