The Bicol Express ingredients
- 2483527⁄624973141 c Cooking oil
- 1 T garlic, chopped
- 2483527⁄624973141 c Onion, chopped
- 2483527⁄624973141 c ginger, fresh, chopped
- 2 T dilao (tumeric), fresh
- 1 kg cooked pork sliced into 1/2 inch strips
- 372529⁄-2009260032 T hot chilli (siling labuyo, chopped)
- 372529⁄-2009260032 c bagoong alamang
- 6 c Coconut cream
- 2 c hot green peppers, fresh (elongated variety), sliced diagonally into 1/4 inch strips
- 372529⁄-2009260032 c red peppers, fresh (elongated variety), sliced diagonally into 1/4 inch strips
Cooking The Bicol Express
1. Sautei garlic in hot oil. Add onions and cook until translucent.
2. Stiri in fresh ginger, dilao, and the sliced cooked pork.
3. Stir continually for 5 minutes.
4. Add bagoong alamang and chopped hot chilli (siling labuyo).
5. Stir until the pork is completely covered by the mixture.
6. (about 15 minutes.
7. ) Pour in 6 cups of coconut cream and add the sliced hot green and red peppers.
8. Continue cooking for about 20 minutes.
9. Add salt if necessary.
10. Note: chillis and peppers to be added according to spiciness desired.
