Thai pasta salad with peanut sauce ingredients
- 1⁄4 c Evaporated skim milk
- 4 1⁄2 t Creamy peanut butter
- 4 1⁄2 t Red Onion -- finely chopped
- 1 t Lemon juice
- 3⁄4 t Brown sugar
- 1⁄2 t soy sauce, low sodium
- 1⁄8 t Ground red pepper
- 1⁄2 t Fresh ginger root -- grated
- 1 c Whole wheat spaghetti --
- Cooked, drained, hot
- 2 t Green onion -- finely
- -chopped
Cooking Thai pasta salad with peanut sauce
1. Combine milk, peanut butter, red onion, lemon juice, sugar, soy sauce, and red pepper in medium saucepan.
2. Bring to a boil over high heat, stirring constantly.
3. Boil 2 minutes, stirring constantly.
4. Reducei heat to medium-low.
5. Add ginger; blend well.
6. Add spaghetti; toss to coat.
7. Top servings evenly with green onion.
8. Serve.
