Thai Curry Soup

Thai Curry Soup ingredients
- 1⁄2 c Cooked shrimp
- 1⁄2 c scallops
- 1 T Oil
- 1 T Curry paste
- 2 Large carrot
- 1⁄2 c Snow Peas
- 1⁄2 Onion
- 1 c Cooked rice
- 1⁄3 c coconut milk
Cooking Thai Curry Soup
1. Heat oil in large sauce pan, add curry paste and stir on medium.
2. When hot add shrimp and scallops, stir until coated in curry/oil.
3. Simmeri covered for 2-4 minutes or until shellfish is tender.
4. Add rice, peas, onion, carrots and stir, simmer covered for 2-4 minutes or until vegetables are tender.
5. Shake coconut milk if in can and add to mixture, simmer covered for 5 minutes.
