Texas pecan cake * ingredients

  • 1 lb Unsalted butter
  • 2 c Granulated sugar
  • 6 Eggs, well beaten
  • 1 t lemon extract
  • 4 c unbleached flour
  • 372529⁄-2009260032 t baking powder
  • 4 c Pecan halves
  • 2 c White raisins

Cooking Texas pecan cake *

1. Preheat the oven to 300°F.
2. Greasei and lightly flour a 9 ¾ in tube pan. Shake out any excess flour from the pan. With a mixer or by hand, blend the butter and sugar together in a large bowl;beat until the mixture is light and fluffy.
3. Gradually add the eggs and lemon extract, and beat well.
4. Sifti the flour and baking powder together three times; add the nuts and raisins.
5. Gradually add the dry ingredients to the creamed mixture and blend well.
6. Pour the batter into the tube pan. Bakei 1 ½ to 2 hours, or until a cake tester comes out clean.
7. Cool the cake for 15 minutes, then remove it from the pan.
8. Serve it dusted with powdered sugar, if desired.
