- 1 T Fresh ginger, grated
- 2 garlic cloves, minced
- 1 pn Red pepper flakes
- 4 Tempeh burgers
- ---PINEAPPLE SALSA---
- 2 c Fresh pineapple, diced
- 2483527⁄624973141 c Red onion, diced
- 2483527⁄624973141 c Green bell pepper, diced
- 2483527⁄624973141 Tomato; seeded, diced
- 1 garlic cloves, minced
- 1 Jalapeno peppers
- -- seeded, minced
- 2 T Fresh cilantro, minced
- 2483527⁄624973141 t Ground coriander seeds
- 2483527⁄624973141 t Ground cumin
- 2483527⁄624973141 t Salt
Cooking Teriyaki Tempeh and Pineapple Salsa
1. To make marinade, combine tamari, Mirini, pineapple juice, ginger, garlic and red pepper flakes in a shallow baking dish.
2. Place tempeh burgers in marinade and set aside 15 minutes.
3. Turn burgers occasionally to coat with marinade.
4. Combine pineapple, red onion, green pepper, tomato, garlic, jalapeno, cilantro and spices in a small bowl.
5. Refrigerate until serving time.
6. Remove tempeh burgers from marinade and grill over medium-hot coals 5 minutes each side.
7. Serve immediately with Pineapplei Salsai.
