Tequila Fajitas ingredients
- 1 lb Skirt steak
- 1⁄4 c Tequilla
- 1⁄2 c Fresh lime juice
- 1 c Corn oil
- 1 T Liquid Smoke
- 1 t worchestershire sause
- 1⁄4 t Pepper
- 1⁄2 t Salt
- 3⁄4 t Paprika
- 1⁄2 c Scallions
- 1 c Green bell pepper
- 1 c tomato concasse
- 8 flour tortilla
Cooking Tequila Fajitas
1. Place beef into freezer for 30 minutes to firm up. Slice across the grain,.
2. Into thin strips.
3. Combine tequila and lime juice.
4. Pour over steak.
5. Cover and chill for 2 hours.
6. Remove from marinade.
7. Combine oil, liquid smoke, worcestershire, salt, pepper, and paprika.
8. Beat until smooth.
9. Heat oil mixture in a dutch oven, over a moderate flame.
10. Add steak; heat and stir for 1 minute.
11. Add onions and scallions.
12. Heat and stir for 1 minute.
13. Ladle onto heated plates.
14. Top with tomato concasse.
