Tangy Taramasalata ingredients
- 2 1⁄2 slices white bread, crust removed
- 1⁄2 c Milk
- 2 garlic cloves, finely chopped
- 1⁄4 Fresh lemon juice
- 4 oz smoked cod roe, skinned
- 1⁄4 c olive oil
Cooking Tangy Taramasalata
1. Put bread in a shallow bowl, add milk and set aside to soak for 5 minutes.
2. Transfer bread and milk to a food processor.
3. Add garlic, lemon juice and cool roe. Process until smooth.
4. With motor running, add oil, at first drop by drop, and then in a steady stream.
5. Spoon mixture into a bowl, cover and chill for at least 30 minutes before serving.
6. Serve with French bread or pita and garnish with fresh dill if desired.
