Tangy scarlet runner bean salad

Tangy scarlet runner bean salad ingredients
- 1 lb Scarlet runner beans, fresh
- 1⁄2 med Red onion, thinly sliced
- 1 Clove garlic, minced
- 6 T olive oil
- 2 T Red Wine Vinegar
- 1⁄2 t Salt
- Freshly ground black pepper
- 1 pn Paprika
- 1 t Prepared mustard
Cooking Tangy scarlet runner bean salad
1. Wash the beans, snap off the ends, and french-cut into lengthwise strips.
2. Steami briefly, until just tender; drain thoroughly, and place in a large bowl with the onion and garlic.
3. Tossi well.
4. Combine the remaining ingredients to make a dressing.
5. Pour over the beans, toss well, and refrigerate for an hour or two before serving to blend flavors.
