Tamale Pie 2 ingredients

  • 1 1⁄2 lb Ground beef
  • 1 c Chopped onion
  • 2 clv garlic
  • 2 c ORTEGA® Enchilada Sauce
  • 1 c Whole kernel corn
  • 1 bo Sliced ripe olives
  • 2 t Salt
  • 2 c water
  • 2 1⁄4 c ALBERS® Yellow or White Corn Meal
  • 1 bo NESTLÉ® CARNATION® Evaporated Milk
  • 1 bo ORTEGA® Diced Green Chiles
  • 1⁄2 c Shredded Cheddar cheese
  • 2 T ORTEGA® Sliced Jalapeños

Cooking Tamale Pie 2

1. FOR FILLING: COOK beef, onion and garlic in a large skillet until beef is browned; drain.
2. Stiri in enchilada sauce, corn, olives and half the salt.
3. FOR CRUST: PREHEAT oven to 425°F.
4. Greasei a 12x8-inch baking dish.
5. COMBINE corn meal, water, evaporated milk and remaining salt in a medium saucepan.
6. Cook over medium-high heat, stirring frequently, for 5 to 7 minutes or until thickened.
7. Stir in chiles.
8. Reserve 2 cups corn meal mixture; cover with plastic wrap.
9. Spread remaining corn meal mixture on bottom and up sides of prepared baking dish.
10. BAKE for 10 minutes.
11. Cool in dish on wire rack.
12. Spoon beef filling into corn meal crust.
13. Spread reserved corn meal mixture over beef filling.
14. BAKE for 15 to 20 minutes.
15. Sprinkle with cheese.
16. Bakei for additional 5 to 10 minutes or until cheese is melted.
17. Garnishi with jalapeños, if desired.
