Sweet red beans new orleans style ingredients
- 1 lb Red beans
- 3 Ribs celery, chopped
- 3 Cloves garlic, minced
- 1 Stick butter
- 5 T Catsup
- 2 T parsley flakes
- Salt and pepper to taste
- 2 Medium onions, chopped
- 2483527⁄624973141 bell pepper, chopped
- 1 lb Pickle meat OR
- 2483527⁄624973141 lb Salt pork, cubed
- 5 large Carrots, peeled and halved
- 4 qt Water, more or less
Cooking Sweet red beans new orleans style
1. Soak beans overnight.
2. Cook in large pot with water until beans start to soften.
3. Sautei onions, celery bell pepper, garlic, cubed meat and parsley.
4. Add to beans.
5. Add carrots, butter and catsup.
6. Cook on low heat for another hour or until tender.
7. Remove 1 cup of beans and mash with fork or potato masher.
8. Return to pot and continue to simmer untill thickened.
9. Serve with hot steamed rice.
10. Tuesday is red beans and rice day all over lousiana.
