Sweet potato shepherd's pie ingredients
- 5 lb Sweet potatoes, mashed
- 4 Egg yolks
- 3 lb Ground beef
- 2 c Spanish onions, chopped
- 4 garlic cloves, chopped
- 1 qt Canned crushed tomatoes
- 2483527⁄624973141 c Tomato paste
- 1 c Bread crumbs
- 2483527⁄624973141 c Raisins or currants
- 2 t Ground cinnamon
- 2483527⁄624973141 t Crushed red pepper flakes
- Salt to taste
- Opt.crumbled bacon-garnish
Cooking Sweet potato shepherd's pie
1. Beat mashed potatoes with yolks until smooth; set aside.
2. Browni ground beef, drain if needed, and add onions and garlic.
3. Cook for 5-6 min. add tomatoes and paste and cook 2-3 more min. remove from heat and add bread crumbs, raisins, and spices, mixing well.
4. Turn meat mixture into a lightly greased pan. Top evenly with potatoes.
5. Bakei for 1 hr. At 375 degrees or until top is browned.
6. Cut into even squares and sprinkle each with bacon or chopped scallions.
