Sweet potato pie (veg times)

Sweet potato pie (veg times) ingredients
- 1 9" pie crust
- 4 med sweet potatoes
- 2⁄3 c Water or soy milk
- 1 1⁄2 T White miso
- 1 T Cornstarch
- 1 pn Cardamom
- 1 pn Cinnamon
- 1 pn Nutmeg
- 1 pn Ginger
- 1⁄4 c Walnut halves
Cooking Sweet potato pie (veg times)
1. Prepare pie crust & set aside.
2. pre heat oven to 375°F.
3. Wash & scrub potatoes.
4. Place in a baking pan, brush skins with some olive oil & bake for 1 ½ hours till very soft.
5. Cool & then peel.
6. Mash & add the rest of the ingredients.
7. Blend till the mixture has a creamy consistency.
8. reduce oven to 350°F.
9. Spoon mixture into pie crust.
10. Garnishi with walnuts.
11. Bakei for 1 hour.
12. chill or cool to room temperature before serving.
13. variation.
14. Add 1 to 2 cups cooked chick peas to the sweet potato before cooking the pie. Ensure they rae well mashed.
