Sweet Dijon Pork Medallions

Sweet Dijon Pork Medallions ingredients
- 1 c Apple cider vinegar
- 4 oz Worcestershire sauce
- 24 oz Dijon mustard
- 3 oz Honey
- 3 c Apricot jam
- 2 c Triple sec
- 2 T dried red hot pepper
- 48 boneless pork medallions
- 1 c Oil
- 4 c demi-glace
Cooking Sweet Dijon Pork Medallions
1. Combine first seven ingredients in a saucepan and bring to a boil.
2. Cool the marinade and pour over pork medallions, coating evenly.
3. Marinatei overnight.
4. Remove medallions from marinade; pound thin and saute in oil, browning on both sides.
5. Remove from pan and add demi-glace and 3 cups marinade.
6. Bring to a boil and reduce until desired consistency.
