Sweet Cream Puddings

Sweet Cream Puddings ingredients
- 1 Knox unflavored gelatine
- 1⁄4 c Skim Milk
- 1⁄2 c Skim Milk
- 8 oz Lowfat ricotta cheese
- 8 oz 1% lowfat cottage cheese
- 10 Equal Sweetener
- 1 t vanilla extract
- 1⁄2 c frozen unsweetened strawberr
Cooking Sweet Cream Puddings
1. In blender, sprinkle unflavored gelatine over cold milk; let stand 2 minutes.
2. Add hot milk and process at low speed until gelatine is completely dissolved, about 2 minutes.
3. Add ricotta, cottage cheese, Equal and vanilla; process at high speed until thoroughly blended, about 2 minutes.
4. Equally pour into 2 medium bowls; set aside.
5. In same blender, puree strawberries; strain, if desired.
6. Thoroughly combine puree with one mixture.
7. Chill both bowls until mixtures are set, about 3 hours.
8. To serve, whisk each mixture until smooth.
9. Into each of 6 dessert cups, spoon mixtures side-by-side.
