Sweet Avocado Mousse

Sweet Avocado Mousse ingredients
- 1 pk Unflavored gelatin
- 1⁄4 c Coconut Flavored Rum
- 1 med Ripe avocado
- 1 c Lemon Yogurt
- 3 Egg Whites, Room Temp.
- 1⁄4 c Sugar
- 3 T Chopped pistachios
Cooking Sweet Avocado Mousse
1. Sprinkle gelatin over rum in a small saucepan; let stand for 5 minutes to soften gelatin.
2. Heat, stirring constantly, over low heat until gelatin dissolves, 3-5 minutes.
3. Remove from heat.
4. Piti and peel avocado; cut into quarters.
5. Pureei avocado and yogurt in a blender bowl.
6. With blender running, slowly pour in gelatin mixture and continue to process until thoroughly blended.
7. Transfer to a large mixing bowl.
8. Beat egg whites in a mixer bowl to soft peaks.
9. Gradually beat in sugar and continue to beat until stiff.
10. Gently fold egg whites into avocado mixture.
11. Spoon into serving bowls or 6 goblets.
12. Refrigerate covered for 2 hours.
13. Sprinkle with Pistachios just before serving.
14. 167 calories per serving.
