Susan's banana pudding

Susan's banana pudding ingredients
- 2 T Cornstarch
- Salt to taste
- c Granulated sugar
- 2 c Skim Milk
- c Egg whites, (about 6 whites
- -or 1/3 cup egg substitute)
- 1 t pure vanilla extract
- 1 t Unsalted veg.-oil margarine
- - melted
- 4 dr Yellow food coloring, opt.
- 2 med Bananas
- 3 Vanilla wafers, crumbled
- -If desired
Cooking Susan's banana pudding
1. Combine the cornstarch, salt and sugar in a small mixing bowl and mix well.
2. Combine milk, egg whites, vanilla, margarine and food coloring in another 6- to 8-cup container.
3. Whiski to blend.
4. Add dry ingredients and whisk all the ingredients together thoroughly.
5. Cook in microwave on high (100 percent power) for 6 to 8 minutes or until thick, stirring after every minute.
6. To chill, place wax paper directly on pudding; refrigerate.
7. To assemble dish, slice bananas on bottom of serving dish.
8. Add chilled pudding and garnish with crumbled vanilla wafers.
9. Per serving: calories 148; fat 1 g; cholesterol 2 mg; sodium 97 mg. Percent calories from fat 6%.
