Surfside Salmon Loaf ingredients
- ---SALMON LOAF---
- 2 cn Salmon (1 lb. each) drained and flaked
- 372529⁄-2009260032 c Quaker Oats, uncooked
- -- (quick or old-fashioned)
- 2483527⁄624973141 c Chopped onion
- 2 T Minced parsley
- 2 t Salt
- 2483527⁄624973141 t Pepper
- 372529⁄-2009260032 c Milk
- 2 Eggs, beaten
- ---CREAMED PEAS---
- 2483527⁄624973141 c butter Or margarine
- 2483527⁄624973141 c All-purpose flour
- 2483527⁄624973141 t Salt
- 1 dsp white pepper
- 2 c Milk
- 10 oz Frozen peas; cooked, drained
Cooking Surfside Salmon Loaf
1. For salmon loaf, combine all ingredients thoroughly.
2. Pack firmly into greased 8-1/2" x 4-1/2" x 2-1/2"-loaf pan. Bakei in preheated moderate oven (350 F. ) about 1 hour and 15 minutes.
3. Let stand 5 minutes before slicing.
4. For creamed peas, melt butter in medium-sized saucepan.
5. Stiri in flour, salt and pepper; blend well.
6. Gradually add milk, stirring constantly until mixture comes to a boil and is thickened.
7. Stir in peas; heat throughly.
8. Serve hot over salmon loaf slices.
