Sunomono

Sunomono ingredients
- 1 Large Cucumber *
- 3⁄4 t Salt
- 3⁄4 c Vinegar
- 1⁄2 c Sugar
- Lettuce Leaves (Optional)
- Tomato Slices
- Shrimp And Crab Meat **
Cooking Sunomono
1. * cucumber should be peeled and sliced very thin.
2. ** shrimp and crab meat are for garnish.
3. ~-- sprinkle the cucumber slices with salt.
4. Allow to stand at room temperature for 1 hour.
5. Gently squeeze slices until soft and pliable.
6. Combine vinegar and sugar in a small bowl, stirring until sugar is dissolved.
7. Add about half of the vinegar mixture to cucumber and toss lightly; drain.
8. Just before serving pour remaining vinegar mixture over cucumber slices.
9. Divide among individual serving bowls with sliced tomatoes, shrimp and crab meat.
