Summer Vegetable Spaghetti

Summer Vegetable Spaghetti ingredients
- 2 c small yellow onion
- 2 c Tomatoes
- 1 c Yellow squash
- 1 c Zucchini squash
- 1 1⁄2 c Green beans
- 2⁄3 c water
- 2 T Fresh parsley
- 1 garlic cloves
- 1⁄2 t Chili powder
- 1⁄4 t Salt
- 1⁄8 t Freshly ground black pepper
- 6 oz Tomato paste
- 1 lb spaghetti
- 1⁄2 c Parmesan cheese
Cooking Summer Vegetable Spaghetti
1. Combine first 10 ingredients in large saucepan; cook for 10 minutes, then stir in tomato paste.
2. Cover and cook gently, 15 minutes, stirring occasionally until vegetables are tender.
3. Cook spaghetti in unsalted water according to package directions.
4. Spoon sauce over drained hot spaghetti and sprinkle Parmesani cheese over top.
