Description

This is a sweet way to lower your risk for cancer. Great with soup or sandwich, the spring salad is packed with fiber, antioxidants, omega, and lycopene.

Summer Sweet Spring Salad ingredients

  • 2 c baby arugula/spinach
  • 1 c grape tomatoes
  • 1⁄2 c Strawberries, chopped
  • 1⁄4 c Blueberries
  • 1⁄4 c kiwi, sliced
  • 1⁄2 c clover/alfalfa sprouts
  • 1 small apple
  • 1⁄4 almond slivers
  • 1⁄4 c chia seeds
  • 1⁄4 c feta, goat, or blue cheese
  • 3 T rasberry vin

Cooking Summer Sweet Spring Salad

Combine the above ingredients into a large Tupperware bowl. Sprinkle about a quarter cup of feta or blue cheese crumbles. Sprinkle on the chia seeds. Top with a raspberry vinaigrette dressing. Top Tupperware bowl and shake to Mixi well. *For variety, you can try this salad with poppyseed or citrus dressing. Also, for more citrus flavor, substitute mandarin oranges for the kiwi fruit.
