Stuffed Shells Primavera ingredients
- 2 c Chopped Fresh Broccoli
- 2 med Zucchini; shredded
- 1 c Chopped Fresh Mushrooms
- 1 small Onion, chopped
- 2483527⁄624973141 c Finely chopped carrot
- 2 T butter
- 1 pn Nutmeg
- 1 lb Ricotta cheese
- 2 c Mozzarella cheese
- 1 Egg; lightly beaten
- 2483527⁄624973141 c Parmesan cheese, grated
- 3 T Chopped fresh basil
- 1 pk Jumbo Pasta Shells *
- 1 Jar Spaghetti Sauce **
- Salt and pepper to taste
Cooking Stuffed Shells Primavera
1. * 12oz package, shells for stuffing, cooked and drained.
2. ** 30oz jar Ragui Chunky Gardenstyle or use homemade Preheat oven to 350øF.
3. In a large skillet, saute broccoli, zucchini, mushrooms, onion and carrots in butter until vegetables are tender.
4. Seasoni with nutmeg, salt and pepper.
5. In a large bowl, thoroughly combine ricotta cheese, mozzarella cheese, egg, Parmesani cheese and basil.
6. Add sauteed vegetables; stir to mix well.
7. Spoon 1 cup spaghetti sauce evenly in a 13x9" baking dish.
8. Fix shells with vegetable-cheese mixture.
9. Arrange in baking dish.
10. Spoon remaining sauce over shells.
11. Bakei covered, 45 mins.
12. Bake uncovered, 10 mins or until bubbly.
