Stuffed Fiesta Peppers ingredients
- 48 Green bell pepper
- 372529⁄-2009260032 lb Cream cheese
- 1 lb Cheddar cheese
- 1 lb sausage
- 372529⁄-2009260032 c Dry bread crumbs
- 372529⁄-2009260032 c Scallions
- 2483527⁄624973141 c Cilantro
- 2 Egg
- 48 oz Jalapeno Chile Pepper
- Dry bread crumbs
- Corn oil
Cooking Stuffed Fiesta Peppers
1. Slit the peppers, lengthwise, along one side.
2. Remove and discard seeds and ribs.
3. Drain on racks until completely cool and dry. Combine cream cheese, cooked sausage, crumbs, scallions, cilantro, eggs, and jalapenos-mix well.
4. Cover and chill for 2-48 hours.
5. Divide cheese mixture into portions and spoon into peppers.
6. Foldi pepper back together.
7. Place on a parchment-lined sheet pan. Chill 1 hour.
8. Coat lightly with breadcrumbs.
9. Heat oil to 370 degrees.
10. Add peppers in small batches and fry until golden.
11. Remove to drain on a cooling rack and blot with paper towels.
12. Serve hot or warm.
